Learn how we make our bonbons! We begin with a clean polished mold, and paint the cavities with cocoa butter. Sometimes using a brush, sometimes a sponge, or our most frequently used choice: an air brush and spray gun. Next we line our shells with chocolate, we pair different types of chocolate with different flavors to complement them, balance sweetness, or avoid the risk of over powering a delicate flavor. After casting our molds we fill those chocolate shells with combinations of jellies, jams, caramels, ganaches, giandujas, crunches and more. There really is no limit when it comes to creativity in flavor and textural combinations you can put inside a bonbon. Once filled our bonbons are closed with another layer of chocolate, using a transfer sheet with our name printed in cocoa butter. This is the final step before un-molding the chocolate bonbons packaging them up and sending them out to all of you to enjoy!
We make collections centered around seasons, or holidays because it gives us just the right amount of perimeters. The time of year hints to us what flavors or colors to use but gives us full creativity when it comes to design or actual composition of the Bonbon.
Our bonbons are thin chocolate shells containing a filling meant to be an experience, mimic a dessert, or induce nostalgia for a certain time or season. They are made to be savored and enjoyed.
They allow us to balance between two worlds, pastry and art. We can be creative with design, technique, and application of cocoa butter, and also with the flavor and textures we chose to fill the bonbons with. They can mimic mini desserts or simply be a bite of pure heaven or nostalgia.
